AIP Mashed Cauliflower

An easy substitute for mashed potatoes that is gluten, dairy, and AIP compliant

Ingredients

  • 1 cup low sodium chicken broth
  • 2 cup cauliflower pieces
  • 2 tsp parsley
  • 3 cloves garlic peeled and diced
  • 2 tsp garlic powder

Instructions

  • Take a large pot and place the chicken broth and garlic cloves in the pan and simmer for about 2 minutes.
  • Add the cauliflower and continue cooking until it becomes soft and mushy about 10 minutes.
  • Turn off the heat and mash with a potato masher.
  • Add the garlic powder, parsley, mix, and serve

Notes

For more of a whipped potato feel you can use a hand immersion blender* instead of a potato masher.
You can also substitute vegetable broth for the chicken broth to make this a vegetarian dish.
