Tigernut Butter (recipe card)

This easy tigernut butter recipe is made with just 3 ingredients. It is gluten, dairy, and nut-free with a hint of cinnamon to give it a natural sweetness.

Ingredients

  • 2 tbsp Tigernut flour
  • 2 tbsp Extra virgin olive oil (EVOO)
  • 1/4 tsp Cinnamon (optional)

Instructions

  • In a small glass mixing bowl place the tigernut flour. Then add 1 tbsp extra virgin olive oil (EVOO) to the flour.
  • Top the mixture with cinnamon (optional). Then mix well.
  • Add the 2nd tbsp of olive oil. Then mix it in until it becomes a butter-like consistency (about 1 minute).
  • Add to your favorite fruit, veggies, gluten-free bread or just enjoy with a spoon.

Tigernut flour is a little more expensive than other types of flour, but making your own tiger nut butter is cheaper than buying already prepared jarred tiger nut butter*.
For a more savory snack add a dash of sea salt. If you want your nut butter sweeter, add a tsp of maple syrup or coconut sugar.
You can use coconut* or avocado oil* as a substitute for the extra virgin olive oil, but you may need to use a blender* or food processor* to mix the flour and coconut oil.
If you have any left over tigernut butter you can place it in a sealable container in the fridge for up to 10 days. Depending on the oil you use it may need to thaw out before eating.
