Cauliflower Rice (Blender or Food Processor)

How to make cauliflower rice whether you have a blender or not

Ingredients

  • 1 head of cauliflower, cut into large chunks
  • 2 tbsp cold or expeller pressed extra-virgin olive oil

Instructions

  • Put two cauliflower chunks in a food processor or blender and pulverize until it forms a rice consistency. Continue until all of the cauliflower is riced.
  • Place a large skillet over medium heat, add olive oil, and cook for about a minute.
  • Add the riced cauliflower and cook for 1 minute stirring continuously
  • Cover and cook for about 8 minutes.
  • Remove the lid and cook for 3 minutes stirring.
  • Cover and cook for another 3 minutes.
  • Remove the lid, fluff with a spatula, and serve.
