How to make cauliflower rice whether you have a blender or not

Ingredients
- 1 head of cauliflower, cut into large chunks
- 2 tbsp cold or expeller pressed extra-virgin olive oil
Instructions
- Put two cauliflower chunks in a food processor or blender and pulverize until it forms a rice consistency. Continue until all of the cauliflower is riced.
- Place a large skillet over medium heat, add olive oil, and cook for about a minute.
- Add the riced cauliflower and cook for 1 minute stirring continuously
- Cover and cook for about 8 minutes.
- Remove the lid and cook for 3 minutes stirring.
- Cover and cook for another 3 minutes.
- Remove the lid, fluff with a spatula, and serve.
